Its life or death the way nature is. Meaning you can go years without needing to fight or run away. In places like Yves the vast majority likely never see a monster or even a nonhuman. They all need to be wary just like humans needed to be wary in our world of foreign people, back before governments, militaries and police. Stranger danger.

But in actuality its life or death in maybe 1 out of 10 cases. Most of the time someone enters the sprites territory its likely for trading purposes or to make a deal of some sort for healing from the life Master at the HT. There are likely trading places that are known to the surrounding tribes, safe routes like the waterways.

They fire on Richter because he is
    a) a human and all/ most humans in the area are yvesians.
    b) They hate poachers and Richter is poaching on their land.
    c) he follows none of the rules they might have in place for outsiders and is found sneaking around.

Truth is, most rational people would have fired given the circumstances. Not because they fire in most cases, but because Richter is effectively running around with a big sign saying, "i'm a human poacher. Huh, huh, huh". We know Richter doesn't know any better, but that doesn't change the fact that he is far inside sprite territory uninvited and he is poaching on the sprites animals. Not only that, he is killing those animals in droves for exp rather than out of need and is leaving them to rot where they fall.

As far as I can tell Richter thinks the sprites are xenophobes solely because they give him a hard time, I don't remember any other evidence. From their perspective they picked up an armed intruder who had killed who knows how many animals for exp and brought him to their leader for judgement. They diden't fire to kill or torment Richter in any way.

Sion is the only Sprite who treats Richter with disdain, Unlike the other sprites we see Sion is a bit of a racist towards humans. He has his reasons, but that doesn't change the fact that as of book 1 he hates all humans. Similarly Sion attacks that goblin in the bar without a second thought, which is due to racial hatred, but its also because Sion is just plain troubled.

Him dealing with the origin of his racism and xenophobia in book 2 is a major trial for him, one where he is forced to face the way his actions got his blood brother killed head on over and over and over again. That trial is brutal, but Sion overcomes it turning post traumatic trauma into an opportunity for post traumatic growth.

Unlikely. A general outline isn't that difficult, but hard dates aren't forthcoming. We have no hard years for the kingdom of Yves, but we do have an idea of several major events that shook the kingdom and we know it went through a period of expansion, likely several periods.
