I've only read the slime dungeon books, the divine dungeon books, and book 1 of the laboratory. The others I found searching amazon.
The Ancient Dreams series definitely counts, yeah. At least the first three, the latest is a prequel set before the dungeon came into being. The author is Benjamin Medrano, and the order is Ancient Ruins Spells of Old Halls of Power There's also the Dark Dungeon series by D.R. Rosier Dungeon Spawned Dungeon Imperiled Dungeon at War The last one I know of that isn't already on the bigger list above is Dungeon Lord by Hugo Huesca It occurs to me that the Ancient Dreams series and Dungeon Lord are about humanoids who control dungeons, rather than Dungeon Cores. So the story is told from their perspective, not from the perspective of the dungeon itself, if that makes a difference.
Still needs some work... http://litrpglist.com/dungeon-pov-litrpg-books/ Ideas on how to make it better? Other than adding book covers, blurbs, etc.
